Yellow Transparent
Also known as "August Apple". It is a good eating apple, and excellent for making sauces and pies. It bruises very easily, becomes overripe quickly, and will not keep much longer than a week. Freezes well for later use.
Vista Bella
Dark red variety with somewhat coarse cream-white flesh having a sweet flavour. Good for eating fresh and very good for cooking
Red Astrachan
Dark red skin splashed with yellow. Flesh is white, crisp, juicy and having a unique, brisk, aromatic flavour. It is an excellent cooking apple and is a favourite dessert apple for some people. When fully ripe the flesh may become stained with pink and makes a very pretty sauce.
Jerseymac
Deep red apples are crisp, juicy and quite aromatic. They are excellent eaten right off the tree or cooked into pies or sauce. They bruise easily and do not keep long.
Melba
Light green with red blush. Bruises very easily. The flesh is fine textured, tender and crisp, and is high in acid. Good for eating and excellent for cooking.
Dolgo Crab
Small oblong red apples which are tart-sweet. They jell easily, without added pectin, and make very attractive red jelly.
Summer Pear
A Bartlett type pear with fruit that is smaller. Excellent for canning. Ripens very quickly and does not keep long.
European Blue Plums
Several varieties grown to maintain a consistent supply. Generally a large plum with a blue skin with golden flesh. Freestone to semi-freestone, and sweet they make an excellent eating plum. Available until late September.
Paula Red
Solid red blush over a yellow background. Excellent slightly tart flavour. The creamy white flesh is non-browning like Cortland and is perfect in salads. It is a very good cooking apple (good for pies) and has a long storage life for a summer apple.
Clapps Favourite
An old-time pear of above average quality. Great for fresh eating and canning.
Hume
Red blush over a yellow background. Bruises easily. Flesh is soft, juicy and good for eating. Also good for pies.
Lobo
A large, lopsided globular apple with smooth deep red skin, splashed with white pin dots. Very tasty eaten fresh and excellent for pies and sauces.
Damson
A small, blue oval plum. Medium quality eating, but outstanding for culinary use.
Montroyal
A european Blue type plum. Medium sized round fruit. Flesh is golden and not stone-free. Can be sweet.
PEI Plum
A naturalized European plum . This is most likely the one that grew on the family homestead. Blue skinned medium sized plum. Flesh is golden and not stone-free. Still prized for its culinary use. Sometimes referred to as a "Damson" which it is not.
McIntosh
Green with a blush of bright red. White flesh stained with red. Flesh is crisp, juicy, subacid, and aromatic. It is best eaten out of hand but also makes good pies and sauces. It stores up to 3 monthes in regular cold storage. Bruises easily. Our warm days and cool nights makes it perfect for growing a great tasting Mac.
Joyce
Light green splashed with red streaks on the sunny side. Fine grained, crisp, juicy, and slightly tart. Does not keep well. Used mostly for cooking.
Cortland
The perfect apple! A dark red apple with bright red stripes showing on lighter skin areas. The quality is excellent with fine grained, crisp, tender white flesh which does not turn brown when sliced. Perfect for adding to salads or for pies and sauces. A very good keeper.
Gala
Streaked with bright orange and red covering most of the apple. Flesh is creamy yellow. Moderately rich, aromatic, fairly sweet, sub acid, firm crisp and juicy.
Honeycrisp
Solid to mottled red with a greenish yellow background. Flesh is cream-coloured, firm, juicy, with tremendous crispness. Flavour is mild and well-balanced. Flesh is very melting when eaten, reminiscent of watermelon.
Flemish Beauty
Skin is reddish-yellow. Flesh is creamy, sweet and succulent. A very high quality dessert pear.
Macoun
A very dark red apple. Richly flavoured, crisp and aromatic flesh. A high quality dessert apple. Also good for pies and sauces.
Spartan
Almost completely red apple. Firm, crisp and juicy, with a zesty blend of tart and sweet. Great eating apple and good in salads and desserts.
Golden Russets
Apples are a golden colour with a bronze blush. heavily if not entirely russetted. Inside the rough exterior is a melting flesh, yelowish, fine grained, crisp, juicy and aromatic. It is so sugary that the juice becomes sticky. A superior quality apple for eating fresh or making cider. Poor cooking apple.
Jonagold
Red over greenish yellow background. Flesh is firm, juicy, crisp apple. Very tender skin and a sweet aromatic flavour. Great for eating and good for sauce or juice blends when fresh.
